Caesar Dressing
Homemade Dressings style
- 1 tablespoon Homemade Dressings mix
- 1/3 cup fresh lemon juice or wine vinegar
- 1 teaspoon Dijon mustard (optional)
- 1 teaspoon Worcestershire sauce
- 4 anchovy filets or anchovy paste to taste*
- 2 cloves pressed garlic or 1/2 teaspoon garlic powder
Combine and let rest for 20 minutes
- Add 2/3 cup olive oil
- Add one coddled egg or 1/4 cup pasteurized liquid egg product
Blend well to emulsify with a wire whisk or electric blender/ food processor
Toss the salad with parmesan cheese and good croutons
*Delete the anchovy and the dressing will still taste great. It just will not be a true Caesar.
