Homemade Dressings Frittata
- 4 large eggs or 2 eggs and 1/2 cup egg substitute
- 1 teaspoon Homemade Dressings seasonings
- 2 tablespoons olive oil
- 1/2 cup sliced veggies such as onion, leek, fennel, mushrooms, etc
- 1 cup baby spinach leaves
- 1/4 cup of any fresh herbs you may have (just fresh parsley will work)
- 1/2 cup protein such as smoked salmon, cooked shrimp, diced ham, etc
- 2 oz of your favorite cheese (goat cheese works well)
- Sliced bell pepper for a garnish
Preheat oven to 375
Beat eggs with Homemade Dressings seasoning
Saute veggies in olive oil using an ovenproof skillet for 2 minutes
Add egg mixture, spinach, and fresh herbs.
As eggs cook, pull them to the center of the pan with a spatula
When eggs are half way set add protein, then the cheese
Top with sliced bell pepper
Finish in the oven for 6 or 7 minutes
